Shepherd's Pie with a twist

1 1/2 pound ground beef
1 can cream of mushroom soup
small onion chopped
1 1/2 cup frozen vegetables (California blend)
shredded cheese
prepared mashed potatoes

Brown ground beef and drain excess grease. Add cream of mushroom soup, onion, and vegetables. Heat through and place in bottom of casserole dish. Put desired amount of shredded cheese on top of beef and then spread prepared mashed potatoes over cheese. Cook at 350 degrees for about 40 minutes.

This is really good. I got the original recipe from allrecipes.com but I have made several changes to it. For the mashed potatoes, I just boil potatoes and mash them without adding anything to them. It's healthier and really yummy. Hope you give this a try and enjoy!

Chicken Pot Pie

1 lb. chicken breast halves - cubed
1 cup sliced carrots
1 cup frozen peas
1/2 cup sliced celery
2/3 cup butter
2/3 cup chopped onion
2/3 cup flour
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. celery seed
4 cups chicken broth
1 1/3 cup milk
2 pie crusts

In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 45 minutes. Remove from heat, drain and set aside.
In the saucepan, over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. Slowly stir in chicken broth and milk. Simmer over medium-low heat and whisk until thick.
Place chicken mixture in bottom pie crust. Pour hot liquid mixture over top and cover with crust. Seal edges and slit top for steam to escape.
Bake at 375 for 45 minutes.

This is Nicole's recipe and it is mmm mmm good! I have never been a big pot pie fan but this is simply amazing. It makes quite a bit and I have to cook mine in a deep casserole dish. This is comfort food at it's best! Enjoy!

Tater Tot Casserole

3 cups tater tots
1 pound lean ground beef
1 16 oz can green beans
2 cans cream of mushroom soup
1/2 cup water
1 cup cheddar cheese, shredded

Arrange tater tots to cover the bottom of a 9x13 inch baking dish. Brown the ground beef, drain, season with fresh pepper, and place over the tater tots. Combine green beans, soup, and water in medium bowl. Pour the mixture over the beef. Bake at 350 degrees for 20-25 minutes. Sprinkle shredded cheese over the top and bake for an additional 5 minutes.

I got this recipe from the Worldwide Ward Cookbook. It is yummy and very easy! It's a great thing to make if you need to throw something together quick.

Turkey and Stuffing Pie

3 cups prepared stuffing (I use Stove Top)
2 cups cubed cooked turkey or deli sliced turkey cut up
1 cup grated Swiss cheese
3 eggs
1/2 cup milk

Press the stuffing onto the bottom and up the sides of a well greased 9 inch pie plate. Top with turkey and cheese. Beat eggs and milk and pour over cheese. Bake at 350 for 35-40 minutes. Let stand 5-10 minutes before serving.

I LOVE this recipe. It is super easy and super delicious. It is Thanksgiving dinner in a casserole. I use fresh deli meat for this recipe and it is wonderful. I can't wait to use left over Thanksgiving turkey! Hope you like it!
